  • In Minecraft Education Edition there are a few options.
    1. Border blocks that blocks users from entering restricted areas.
    2. Allow/deny-blocks that deny or allow users from building or destroying on selected areas.
    3. Immutable world option. Make it possible to deny all changes on a world.
    The three can be used at the same time, making it possible to select where users are allowed to be and where they are allowed to build.

    You can set command blocks to make students game mode as Adventure when they enter an area, and when they leave an area their game mode shifts to Survival / Creative. Let me know if you need more details as to how to set it up.
