Unable to install
Every time I try and install it, it says "something happened on our end."

I am sorry to hear you are having issues installing Minecraft Education. Can you provide more details on if this is a school device or a personal one? The main fix for this is to move the install file to the desktop or my documents folder and then run it as an administrator. Give that a try and let us know how it goes.
