If you're stuck in the beta, I'd suggest uninstalling your Minecraft: Education Edition app and then reinstalling the latest stable version from here: https://education.minecraft.net/en-us/get-started/download

If you uninstalled and reinstalled already, make sure you're not reinstalling from the same beta installer file. Download the latest from the above URL before reinstalling.
