None of my text is visible at any time.
This includes title screen, loading hints, chat, and nametags.

Hmmmm, I haven't see this issue before. If you click on any of the buttons, do the screens load? And if they load, do they have text?

My engineering team has also commented that you may need to do a clean install of Minecraft: Education Edition. If you do this, make sure to export and save all of your worlds first.
