Thanks for these reports.  Our team is investigating some issues with Macs currently, so this is very useful information.

I am also seeing this issue running Minecraft Education (v1.17.31) on macOS 12.0.1 and macOS 12.1. However on a Mac running macOS 11.6 the login process completes just fine and I am able play.

This is a particular problem as we are planning to use Minecraft Education in an advanced visual arts class on campus and our computer lab is running macOS 12.1.

Are then any workarounds or fixes to enable Minecraft Education (v1.17.31) to run without this issue?

As the previous poster mentions, the regular (Java) edition runs just fine on macOS 12.0.1 and macOS 12.1

(Oh and by the way my Microsoft login works just fine for Minecraft Education on Windows PC and iPad versions also)

I have a new Mac and I just don’t use the Beta versions — saves me a headache.

I am reporting the same issue on on
    OS:
    macOS Monterey 12.6
    HW:
    MacBook Pro (16-inch, 2019)
    2,6 GHz 6-Core Intel Core i7
    16 GB 2667 MHz DDR4
    Macintosh HD
Intel UHD Graphics 630 1536 MB

Minecraft takes up disproportionate amount of CPU recourses, effectively freezing on multiple occasions with maxing up several cores (6 cores). In gameplay, the Minecraft usually displays a loading bar while playing and freezes. The only way around is to force quit the app.

Combined with connectivity issues of the latest iOS Minecraft app, the Minecraft became unusable at our school.

I would love to provide detailed log, however, Minecraft doesn't produce any. If there is a way to help with precise logging, I will gladly help.

I can create a ticket for you to work with us in debugging this. Albert Radvan thank you for offering to help out with this.
