Depends on what device you're playing on. From a Windows 10 computer, the Game Bar is an excellent and easy way to do video capture. You can start it while playing by pressing the Windows button and G.

Sorry to hear you're having problems.
Are you playing on a Windows 10 device? If so, you'll need to go to: Start>Settings>Apps. Look for Minecraft Education Edition... there should be two copies installed. Click on the oldest version and uninstall it.
